My mamaw made the best banana pudding ever, and she passed the recipe on to my mom, so I benefit from it! We decided to have a family recipe bake-off between me, Dave and Jenny! I felt very confident in this one. It's best warm, but it's JUST fine cold!
From my Mom:
Banana Pudding
3 eggs (separated)
3 cups milk
1/2 cup flour
1 cup sugar (plus a little extra separately, maybe a couple tablespoons to mix with egg whites for topping)
2 teaspoons vanilla
3 bananas
Box of Nilla wafers (you may, or may not use them all)
Set oven to 400⁰ (to brown meringue topping)
Slicing bananas in advance makes the layering process faster. The pudding thickens as it sits, & it's not as easy to spread.
In 2 qt saucepan, whisk together flour, sugar, 3 egg yolks and about half the milk on medium heat. Add the rest of the milk gradually, stirring constantly. Once it thickens (I don't let it get too thick), remove from heat & add vanilla.
Spoon a little pudding in a 2 quart dish, then layer wafers, pudding, bananas, pudding until dish is almost full. (I make sure to have a layer of pudding on top).
Use a hand mixer to beat your 3 egg whites for 2-3 minutes until it starts to stiffen. Then add a little sugar at a time while beating until it peaks.
(If you'd like a higher top, you can add more egg whites)
Spoon meringue on top. Then use the back of the spoon to create the peaks.
Bake until browned on the top. It's only going to take about 3-4 minutes so make sure to watch it closely.
*Most of the time I double the recipe so I can share. Or have an extra dish for myself. Lol
