Who doesn't love nachos stacked high with layers of meat, beans and cheese? It's a delicious treat and our families go to on Taco Tuesday but like a lot of us I'm trying to eat healthier and found a substitute for the chips, cauliflower and it's actually really good.
Here's the recipe for 'healthier' nachos that substitute cauliflower for chips. When you cut the cauliflower I cut them so they resembled thicker versions of nachos and I think a full head of cauliflower counts as three servings.
- Preheat oven to 425º.
