We were watching The Food Network on Saturday morning and I got inspired to cook something special for dinner. So Allison, Ava and I went to the store to get all the stuff we needed for Chicken Enchiladas!
And they turned out really good! The recipe is great but I'd buy an extra can of Enchilada Sauce because it just didn't seem like it was enough. It makes two big pans, 8 enchiladas each so you might want to halve the recipe.
