Chicken Angelo
4 whole chicken breasts, boned, skinned and split (may use tenders for smaller pieces)
2 eggs beaten
1 cup italian bread crumbs
4 T. butter melted
8 oz fresh mushrooms, sliced
3/4 lb. muenster cheese, sliced
1 1/2 cup chicken broth
Dip chicken in eggs; coat with bread crumbs. Saute chicken in butter until brown; transfer to 13x9 baking dish. Sprinkle with half the mushrooms; cover with cheese. Sprinkle with remaining mushrooms; pour broth over all. Bake at 350 degrees for 30-35 minutes.
